I'm "only" 5'8 but the Vberth always felt too small and confining, with or 
without a sleeping partner; my Catalina 22 had more room. A few years ago a 
friend helped me make a double bed out of the berths that is easily broken down 
and stored, I documented it and took photos, maybe you can get some ideas from 
the arrangement:

I've since upgraded from the air mattress to a 5inch foam that folds into 
thirds and stored in the vberth when not in use. I'm in  a slip so it's not a 
big deal to offload the mattress if I need extra space.

FWIW, I'm not a fan of cutting into the bulkheads either, although I sure 
considered it.
