I don't know the exact answer, but saddle rack is a gait that several breeds have as a designated "official" gait. It is however, known by different names within different breeds - the Rocky Mountain people call it the Rocky Mountain gait, making it sound as if they are the only breed to do it. (Not to mention it's a mouthful to spit out...) Tolt is the Icelandic word for rack, so "saddle tolt" is simply saddle rack. I was talking to a native southerner who has gaited horses recently, one who isn't on the lists that I'm aware of, and she simply used the term "saddle gait" to describe what Eitill was doing.
