If it were me, and I had a horse that didn't stand...which I did...old
Hreggur would just wait for a bit of weight in the stirrup and then
he'd bolt for the moon.  I used clicker training on him and the minute
he DIDN'T bolt...I clicked him.

But with Gusti...hmm...let me think,  when I mount, I always say
'ready?' and he's learned to square himself.

Prior to that, I had someone hold him, while I said 'ready' and he
gradually learned to stand still.

Can you get a helper for a few times?  To help you teach the horse to
stand still?

If not, I would face my horse into a place that it's not easy to move
ahead from, against a fence or something like that.  Maybe into a
corner....

Just another thought, but is your saddle fit okay?  Seems to me Gusti
fussed the most when I was using a treed saddle on him.  He made a
point of letting me know he didn't like the saddle I was using at that
time.

Just some thoughts, maybe someone else will come up with a few better ideas...
