We don't.

See for example SCTP described in draft-ietf-sigtran-sctp-09.txt and 
applied to many applications which for example have to do with 
telephony signalling.

You can also have a look at the proposed charter for the Blocks 
eXtensible eXchange Protocol (bxxpwg) WG which might help 
applications designers get around some problems with TCP.
