But say you run apache - thats usually run as the user apache. Does this mean 
you change the user assignment for the server in question?

You could always run UML (user mode linux) - effectively giving each user a 
virtual linux machine on the physicalmachine. Of course htis would be pretty 
intensive stuff :)
