It actually makes sense to use something like Squirrel Mail instead of a desktop app like Thunderbird. All the emails will remain on the server and this will help from the perspective of keeping backups, ensuring that the emails don't land up in the wrong hands if the laptops are lost etc. I would have suggested something like Zimbra though - it will be easier to use than Squirrelmail and have better support for collaboration.
