Then I suppose you are looking for a sniffer ? . Try ettercap/snort/ethereal or something similar and configure it to listen SMTP sessions.

I think what you want is to monitor the Postfix log file. Try the command 'tail -f /var/log/maillog' You will have to run it as root though.
