What i would ideally like is to see SMTP transactions as they are 
happening. I realise the complicated part would be what if more than1 SMTP 
sessions are going on. Anyway i will keep searching, maybe there is an app 
or something that sits and monitors port 25 and produces output in a simple 
enough format.

vim /etc/syslog.conf

mail.*          /dev/tty9
If you can continously switch to tty9 to view the msgs.
and restart your sysklogd daemon.
Is this really what you are looking for ?
