Can you please be more specific? What did you try and where did you fail?
1. Make sure you have enough partitions.
2. Install either one of server or desktop first.
3. Once that is completed, install the other version in the remaining
partition(s).
4. Edit your grub.conf file to reflect both installations.

Also in Linux, there is not too much difference between Desktop and server
editions excepting for the tools and 'services'. You can install the server and
go ahead and install all desktop tools on it to get full desktop functionality.
Install *all* packages on the CD/DVD - that will give you everything :-)
