Hey people,  I'm back again

I've got a question about backing up this time.  I need to start 
backing up some of my important files again and I was wondering 
something.  How do I set up a backup schedule and do something like 
multi sessions?  I know that works in Jaguar and I've got version 
10.2.1.  I just need to do some simple things like backing up my email 
and maybe my downloads/personal documents folder and my picture folder 
as well (if anything has been added that is).  How do I set that up?  
And I don't want to end up having multiples copies of things burned to 
one CD ( Ya know,  burn email one week,  then burn another copy the 
next week and end up having 2 copies of my email database.  I would 
just have a bloated CD that way).  I want my previously burned files to 
be,  sort of,  "pulled" from the CD and replaced with the curent 
versions?  Do you get what I'm saying?  I'm still pretty new to 
burning.  I burned some stuff last week (It was stuff that I couldn't 
live without),  but I didn't have an OS that would burn multi session.  
Anyways I need some help learning how to set up schedules and how make 
sure I've always at a current copies of stuff on CD.

I'll do a Google and serach the Apple website too.

BTW,  notice that there is no mention of religion now.  Got that
