There is a feature, the "read receipt" that is supposed to do this. See eg <http://www.techtv.com/callforhelp/answerstips/officetips/story/0,24330,3384 950,00.html> for details. However, you can't count on this in general. For instance I turned off this in my client years ago. If you're more devious, investigate web bugs. These are small image files that you include as a reference in HTML mail so that when the message is displayed the image is fetched from your server and you can log that the message has been read.
