There is a feature, the "read receipt" that is supposed to do this.

However, you can't count on this in general. For instance I turned off this
in my client years ago.

If you're more devious, investigate web bugs. These are small image files
that you include as a reference in HTML mail so that when the message is
displayed the image is fetched from your server and you can log that the
message has been read. Again, people may block these, as the main use of
this is by spammers to authenticate addresses.
