I think you should pack up the iMac and deliver it. I have just given my kids and wife a 266Mhz Grape iMac. They run everything in sight on it, and they are having a great time. Trust me, compared to the SE the G3/233 is a rocket. Clearly your standard of "quick" is different from theirs :-) Anyway, I work on my Pismo quite frequently and I also work on the abovementioned 266 and the user experience isn't all that different. I have Office 98 (they love it), ClarisWorks (also love it), a whole bunch of games, digital video, iTunes, etc. The usual stuff. I can't imagine they'll be disappointed very quickly. Someday they'll start to wish they had more speed and you can do the upgrade then, and be a hero twice. :-) ( I think Sonnet has an 800Mhz upgrade for the Rev A... That should do it...) Additional advice: if you absolutely must speed up this machine, join the LEMSwap mailing list and ask for what you need.
