For use on older Macs I consider 2GB t o be the break point between using HFS and HFS+, and i have tested the hypothesis with 4GB and 9GB drives on a Quadra 840av.
However, on anything powered by a 604e or better I always use HFS+ regardless of the drive's size, the CPU is able to overcome most of the lag imposed by using HFS+, to the extent that it is not noticeable on most 200MHz or faster machines.
Only if you need to use the drive in OS 8.0 or earlier should you really consider HFS Standard on an iMac, and I don't think anything prior to 8.1 will run on an iMac anyway.
