Is it possible to copy the Jaguar install disk so I can boot from it when I need to run Disk Utility?
Yes, but there's no need. Disk Utility will run from the startup disk, and it will run from the install disk.
(when you boot up from the OS X install disk, just ignore the splash screen and go to the menubar -> File -> Open Disk Utility)
