Hi,
Do somebody knows if an iMac with 800MHz has poor performance compared to a
1GHz iMac? both using OS X.

How do you define "poor performance"? The 1GHz will be faster at most tasks because of the CPU, bus and memory speed. However, you won't be able to type any faster (I haven't been able to out-type a computer since my 1MB Plus), and internet speed is the same regardless of the machine. (In fact, email for me or I would bet just about anyone could be done as well on my 14-year-old SE/30.) Playing DVD's or CD's won't be any different on the newer iMac, although I believe the new machines have faster drives for burning. My FP 800 does exactly what I bought it for in January 2002, so I don't have any processor envy yet.
