Check http://www.fishbacksw.com/helloJaguar for a little app to put the Happy Mac face back and http://www.ryandesign.com/jagboot and http://www.resexcellence.com/bootimage for user made images to replace the grey apple and find out how to do it yourself there. I've used the patch from ryandesign to put the Happy Mac back, but it seems that he has discontinued his app. The app from fishbacksw does the same.
Unfortunately, Fishback says that their "Hello Jaguar" app does not work with Panther and that they have no intention of updating it.
