This is the key, and Apple's new version of Mail (in Panther) does this very well. I have the default set for images and HTML to be turned OFF.
When I open an email sent to me from someone, a little "banner" appears at the top to inform me that the message contains unloaded images. If I don't want to see the images, I just move on. If I *do* want to see the images (say pictures from a friend), I just click on the "load images" button and for that ONE message, images/html is turned back on.
I believe that this really helps cut down on the spam, since the "web bugs" that spammers use to verify you opened it never get activated, even if you accidentally open the message.
