I figured I'd reply to my own email since I didn't get a really definite answer, and now I know.

The Belkin model appears to work just fine. It attaches my generic PS/2 keyboard and mouse to the iMac very nicely. $30 at Office Depot for the adaptor. CompUSA claims the same part is $15 on their web site, the store didn't have the price on the shelf when I looked yesterday... and CompUSA doesn't open until 10:00. I simply plugged the adaptor into the USB port, then connected my keyboard and mouse, then booted from my OS X Panther Server CD and the mouse works fine, and in the limited typing I have had to do so far (reformat a hard drive and give it a name), the keyboard appears to be working fine as well. So for the price of a used iMac keyboard and mouse, or roughly the price of a cheap generic USB keyboard and mouse, I can now connect my iMac to my PC KVM and save having another keyboard and mouse in my server closet.
