She is on a dsl line, question: will Panther pick it up and just pop online like a Winderbox XP?
Better than XP in my experience .. most DLS uses PPPoE wich is really easy to configure n Panther and Jaguar

Depends on the e-mail client. Mail has import feature for the mailboxes of Entourage, Outlook express, Claris Emailer, Netscape/Mozilla, Eudora, Mail fo OSX and a election for other. (the other imports anything in the mbox format) Address book has a script that will import addresses from Entourage, Outlook express, Palm desktop, Eudora, Claris emailer and Netscape.
Question: is there a way around all that user profile/admin crap?
Yes and no .. you will need to set up an account. But Panther and Jaguar default if there is only one account to auto login .. otherwise you can set that in the users preferences pane
The machine is noticeably slow now, and I expect Panther and Ram
to remedy this . . .am I right?
i think anything is faster than 10.1 and more RAM may slow down the boot (more RAM to check) but it will definitely run faster.
