Do you mean AAC files in iTunes? First you have to change the preferences to encode mp3 rather than AAC (set whatever bit rate you want, for the limited Palm memory it will probably be bad-sounding 96k). That will change the Advanced menu item to Convert to mp3 when you select a track.
