 Since music I buy from the iTunes Store is in AAC format,
how can I play it in an older version of iTunes that doesn't support
the AAC format?

You convert it to AIFF format.

The older version is still available directly from Apple, too.
You can't just convert something from the iTunes store - message comes up saying that protected files cannot be converted to other formats. The workaround is to burn them to CD (CDRW would probably be best so it doesn't cost you a CDR) and then re-import as mp3.
