I don't believe you're a complete idiot, but you are definitely doing something wrong.
Most likely, the problem resides in your settings for IMPORTING and BURNING in iTunes, particularly the latter. I'd bet the coins in my pocket that you have your burning preference still set for MP3 disc. You need to set that for Audio CD. You should set your IMPORTING preferences for MP3 (*not* AAC for this particular use).
The step-by-step is as follows:
1. Select the songs you purchased from the iTunes Music Store that you would like to burn to an audio CD. Make a playlist of these songs.
2. Check your settings to be sure that you have AUDIO CD selected. A typical CD will hold about 12 songs.
3. Burn the CD.
4. Play the audio CD in another audio CD player to ensure that what you want is on the disc.
5. Reinsert the CD into your Mac.
6. iTunes will recognise the disc as an audio CD, launch itself and ask you if you want to import the songs. You do.
7. You will now have two copies of the songs -- one in AAC format and one in MP3 format. The MP3 files have no copy protection or restrictions on them at all. You can delete the "protected" AAC copy if you want but I wouldn't advise doing so.
8. Now those songs, along with your "regular" MP3s, should be available to copy to your Palm.
