One wouldn't, when one has an always-on connection. Handy at other times, though.
However, it occurred to me after posting to see what happenes when you hit send while not connected. You just get an error dialogue, and the message gets saved to the Outbox and sent when you connect again. So the "send later" functionality is there; there just isn't a button/menu command for it.
