I can't test this just now, because my SC740 has just run out of ink... there does seem to be a B&W setting carefully hidden away. This is how it works on my 10.3.9 system:

In the print dialogue there is a drop-down menu headed Copies & Pages; choosing Printer Features from this brings up another labelled Feature Sets. Choosing Expert Settings 1 reveals more drop-down lists, the top one being Output Mode. The options are Color, Grayscale, Black & White and Raw CMYK.

Having gone through all that palaver, you can save the settings as a preset.
