Ryan,
If you are using Tiger, there is an article on macgeekery.com called
"Some Launchd Recipes" where the guy discusses setting up launchd
triggers. One of the example he mentions is the same scenario you
want. Or, you could set up folder actions if you are up to writing
some Applescripts(or using Automator).
