Open the Exensions Manager and change the setting to Base. That's the minimum set you need to run apps, in only a semi-crippled fashion.
Really tho, most extensions only load a minimal amount of code, until they're called upon to do more. IOW, the savings is minor.

The only fonts that OS 9 "needs" are the ones used by the actual system, as determined by the Appearance cdev plus the bitmap versions of the original city faces: Monaco 9pt, Geneva 9 and 12pt, and Chicago 12pt.
Again, you're taking about saving maybe 1/10 sec and about 20KB RAM, then killing your ability to access the fonts later. Not worth it, IMO.
If you want to quibble over time, why not just set Classic to load on boot? OS X handles the memory management -- so when Classic is idle it's occupying less than 50K or so.
