Yes, it should, although you should probably try and use a lightweight window 
manager. (i.e. not Gnome)

I have an old 333MHz Blueberry iMac that runs Jaguar very well in 192MB.

Linux also 'has a GUI', but there is the opportunity to use a less-snazzy one 
that will consume less memory and therefore be perfectly usable.
