Actually you can, for purchased ITMS songs.

If you have iTunes 7.3 or later, you can also do it this way for  
purchased files:

Or this way for all files:

Which doesn't require ANY 3rd party tools, just some attention to  
detail.

Both of which googling for 'transfer music from iPod to Mac' found in  
four hits...
