Well, given that they MAKE the thing. I'd go with 10.4.
10.4.9, actually, per IT8 system reqs:
Macintosh Software
• Mac OS X version 10.4.9 or later
• QuickTime 7.5.5 or later
• 200MB of available disk space
10.4 will run on that iMac, though.
