Ah, changing the port to 25 seems to have worked, thanks! I had a  
feeling it might be the ports, but on the default setting, it lists 25  
as one of the ports used.

I had to reformat my HD because when I upgraded to a 500Gb one, I had  
partitioned it without using the GUID partition map, and Snow Leopard  
wouldn't install on a partitioned HD without it having the GUID map.
And yes, I realize that the POP and SMTP are different protocols, I  
just stated that just to let people know that it was only the SMTP  
server that was having problems :)
