PowerMac G3s (B&W) do not support FireWire Target Disk Mode. They don't support FireWire booting either.
AFAIK this is the only machine that has FW that doesn't support either of those features. I believe there is one or more machine that didn't support them until a firmware update was released but I don't recall what machine(s).
