Check the security properties of the PDF's if they were somehow set to no copying or editing allowed you're stuck. Also, check to see what kind of PDF it is...if it's from scanned documents, it's entirely possible that what you have is just a big collection of images of the pages, not the text. Word cannot edit PDF's, only Acrobat Pro; and in there you can't just click in it and start typing, you have to use the 'Text <something something> tool'...sorry, byut it's my office Mac that has adobe pro on it, and I cannot remember the exact wording of the menu item.
