Carbon Copy Cloner's backup routine works like that. So does Time Machine, for 
that matter (which I've not had any problems with on any of my Macs or the 10 
or so Macs I have using Time Machine here in the College.

One thing that's critical for trouble-free TM operation: good quality external 
drives. I've had the best luck with Seagate and Buffalo drives and the worst 
with WD and el-cheapo third party enclosures.
