Going to a 7200rpm drive should definately be noticeable! It's not just the access speed - those newer drives have bigger onboard caches!
And don't forget to do some basic maintenance on OS X now and then. A tool such as OnyX will let you easily run Apple's three maintenance scripts, then clear all your caches, and rebuild the system ones.
