Actually, you have a couple of responses (now!) from Ipswitch!
I've done some testing with different LDAP clients and OE (apparantely much
like O98) does look for the 'display-name' field (this is not a 'Required'
field in IMail), first when you use it to get email addresses. If that field
is empty, it shows an '_' (underscore) in the address field. If you check
again, it will show the email address. If you have a 'display-name', then it
will show that, but use the email address.
