Hello, if it happens always around the same time, I would suspect Antivirus-Update. To ensure that there is no network problem, I would change the switch port&cable, where the server is connected and check if the NIC is in fiexed and in Place...
Last days I had a Workstation that rebooted without any Log entry for a problem or shutdown every day at 12:50-13:00 - AV-scanning increased CPU-Load, which overheated behause of a broken cooler fan... Maybe it is connected to the mailserver load? Run a slow perfmon and monitor CPU load, Disk IO and TCP connections...
