I tried the e-mail tester at dnsstuff and it shows the user being "unknown".
Why would imail kick back "not local" rather than a simple bounce?

You need to look at your SMTP log for that message to 1) make sure the user
authenticated and 2) make sure that is not a delivery NDR.

One of our customers attempted to email someone at fcohenlaw.com (I've
removed their username) and they got a bounce back of the following:

Your message did not reach some or all of the intended recipients.

      Subject: Hi
      Sent: 11/30/2006 2:51 PM

The following recipient(s) could not be reached:

'[EMAIL PROTECTED]' on 11/30/2006 2:51 PM
550 not local host fcohenlaw.com, not a gateway

This is one of our customers emailing someone else not someone else emailing
our customer.

Any ideas?
