There are a lot of reasons. Exchange fits certain business models and other mail systems fit other business models. We host multiple mail domains for clients, exchange just is not practical for our hosting environment.
The comment "it seems that there are a lot of issues with imail each time a new patch, version or upgrade comes out." Couldn't you subsititute Exchange for Imail. We actually support numerous exchange servers for clients and we see plenty of issues with upgrades on exchange. Imail has features that are really nice and other features that could be strengthened.
