cooperating with a friendly .edu in the neighborhood to serve as your
secondary MX.

you could do this:
@students.elmira.edu
@faculty.elmira.edu
@staff.elmira.edu
This gives you three virtual mail hosts while using only the elmira.edu
zone, on one Imail machine, and therefore the possibility of a host admin
per virtual.
