Default Mail Host is empty.
If I put an alias of "domain.com" against the virtual host (sub.domain.com),
won't it allow the virtual host to pick up mail destined for the real host
(as long as the account name is on both)? I have an alias for
"sub.domain.com" against the virtual host now.

check and make sure that in the alias field for Virtual host configuration
that you have the alias of "domain.com" for each server, also that on the
SMTP Tab the Default Mail Host field is empty instead of "localhost".
