What about OS... Windows 2000 server okay?  Would I be best served to go
with NT?
Also, I would imagine drive speed isn't a big issue, so I could go with IDE
stripe/pairity, right?

P200 would be fine, celeron 400 would be finer

i dunno, what are you trying to do?  One net card one be fine? what do you
plan to do with the other ?

I like intel ether express 10/100.  You can put 1000 ip's on it. How many
ip's do you have.  you can put 1000 virtual mail domains on one ip.
