There may be other ways to do this but this is how I do it:
1) activate the setting that copies all mail to "copies"
2) in "copies" create a rule that sends mail from the user in question to
"usercopy"
3) create a usercopy.fwd file in the "copies" folder with the full email
address to which you want the copy delivered.
4) of course you have to make some other rules up to handle other mail, too.
But this works.

So for every mail he sends, a copy should ALSO be send to [EMAIL PROTECTED]
I cannot use his "CC" field...
Is this possible with iMail?
