First 7 or so days before you move the domains you need to change the TTL in
your named file to something like 4 hours. This way mail will switch over
quickly instead of all sites on the planet that have sent you mail keeping
it for the typical 7 days.

Once you have that done you can make the switch..

Hello All,

   I am going to be eliminating some IP Address this weekend and I know how
to change the domains over from having an IP to becoming a Virtual IP.
However, how can I do this so that NO EMAILS are missed?

   I know it takes time for all of the DNS Servers to be updated.  Therefore
if I change the domain to a virtual domain, will the mail still come thru
correctly even if the IP Address no longer is associated with that domain?

   Does this make sense?
