Have you looked in event viewer? What is(are) the exact errors?
Do you IIS5 going with SMTP started? If so you may have a conflict with port
25, both using it to listen on...
Was IIS5 SMTP up before iMail?
What are your hardware resources, ie. CPU/RAM etc...
