Take a look at these utilities: EFS (http://www.chimera.co.nz/efsmain.htm)
or POPBeamer (http://www.dataenter.co.at/)

Either one collects the domain's email through a POP3 connection and then
forwards it to Exchange. Your customer doesn't need an static IP. Both are
been used by my customers with great success.
