That's something that only you can answer.

Most MTA's are configured to keep trying anywhere from one to five
days before giving up and returning the mail.  Some have an option
to send a "I couldn't send it yet but I'll keep trying" notice before
then so that the sender is aware that there's a problem. (Note: IMail
doesn't have this feature)

If you are confident that server problems and moronic backhoe operators
won't result in a down time of more than a day or so then you don't need
additional MX's.

If you don't want people getting notices that you're unreachable then
you should setup a backup.

Note that in some environments you might want them to receive undeliverable
notices if you want them to fall back to fax/phone contact during long
outages.
