>What's the difference between "tries before returning to sender"

This is the number of attempts that your mailserver will take to deliver a
message. For example, some people will make 96 tries before returning to
sender, with 30 minutes between attempts. This will give an E-mail 2 days
to be delivered before it is bounced.

>and "Gateway Options->tries before sending to gateway" ?

This option only applies if you have a gateway set up (where IMail sends
all outgoing E-mail to another server, which delivers it). I would assume
that this option would allow you to have a setup where IMail would try
delivering the mail, but if it wasn't delivered after X attempts, IMail
would send the E-mail to a gateway that would handle the delivery.
