Actually, the mail will be intra-office more than anything.  I realize mail 
isn't encrypted out to the gateway (without some application-level 
encryption), but all we really need is the communication between their 
employees to be secure. The employees are at different offices around the 
country, so a local mail server wouldn't aid the cause.

To use any type of SSL tunneling program, such as stunnel, they'd need to 
run that on the client as well, right?  I don't know if we can have that 
sorta headache or not ..
