Well, if you can make CF work without problems you can probably handle IMAIL.
We have not had any real problems with ColdFusion. Only occasional problems with iMail.

    This is the 2nd instance I've seen lately of a report on delivered
    messages not appearing in the logs.
I believe they are totally bogus. That is not actually received by iMail but somehow generated for whatever reason. Thus they do not appear in the log. I have tried to identify anything by looking in the log at the time the "message" record appears in the mailbox but no luck.

As for the blank message issue, basically there have been quite a few
discussions about blank messages and the discussions kind of reoccur
from time to time. Reasons considered in the discussions, as I recall
them at least, include:
The ones I have seen are different. These seem to have some sort of header associated. The ones I am seeing do not.

    Low disk, fragmented disk,
We have plenty of disk space and I have seen this happen with a new disk so I don't believe it has anything to do with a fragmented disk (which is the normal state for a Windows 2000 system - aargh).

Netscape chunking
Nothing to do with Netscape.

web messaging
It happens in accounts where web messaging is never or seldom used.

par files,
Do you mean parameter files? Not sure what you mean here. I am also wondering if some parameter setting could be behind this.

 web messaging bad templates
Nope.  Again web messaging has been eliminated from the equation.

virus scanners,
We run McAfee Net Shield but were running it before this started happening (after updating to 7.05 - now at 7.07+ and still persisting).

viruses
Nope.  Started up again after we totally re-loaded the server.

ill-configured clients
Such as what? I can't imagine what one could do with a client configuration that would lead to this. If you mean the e-mail client software I use Eudora and was using it when this started without any changes to the client. I have even gone back to an earlier version and it was still present.

broken senders
What do you mean here? Even if this were the cause it should leave some tracks.

and I know there's been at least one problem with IMAILSRV that was fixed in a release.
We are at the latest release (available to us) unless they fixed this in 7.1x and not in 7.0x. We are resistant to repurchasing iMail to get to 7.1x.
