The docs offer a very thorough explanation of the IMail tags, which, though not explicitly aimed at disabling features, is all you need to know what you're removing. Even without the docs, it'd be a matter ofn of playing around with the HTML in such a way to have minimal impact on the final display (substituting labels or graphics for textboxes, for example) after graying out certain options.
